Last week's meal plan went really well. There ended up being a few deviations (didn't make the Tilapia so that has moved to this week) since we ended up having leftovers one night. We also switched up some of the sides.

Again, I can't stress enough how nice it is to have thought through the week's menu and not have to scramble to figure out what to make.
So the plan for this week is
Sunday: Foraging (this means every man for himself. Whatever you find in the fridge, freezer or pantry that requires minimal/no cooking is up for grabs), Salad
Monday: Skillet Chicken, Salad
Tuesday: Herb Crusted Salmon, Potatoes, Carrots (probably dilled), Salad
Wednesday: Apple-Bacon with sage crusted Tilapia with mushrooms and shallots (recipe to be posted later in the week), Rice, Salad,
Thursday: Out to dinner with Mr. Gooch
Friday: Marinated Steak, Roasted Potatoes, Corn on Cob (all on the grill). We have made this before and it is one of our favorites. I like that it is all done on the grill so there is less cleanup.
Saturday: Dijon Skillet Chicken, with rice, Salad (or leftovers with Salad)

Yum, Dijon Skillet Chicken sounds so good :)
I agree menu planning makes like so much less stressful! The salmon and steak sound scrumptious!
